Munchies with Moonkat: Week 11
Hello everyone! Time for another installation of Munchies with Moonkat. Today I’ll be doing another recipe that was given to me by my grandmother, and one that has always been a huge favorite of mine. It’s Banana Nut Bread – done in a baking insert for a Crock Pot/slow cooker. You can do it without the baking insert or just in a normal pan in the oven, but it comes out so moist and delicious from the Crock Pot, and this is the only way I know how to cook it, so that’s the method I’ll be doing here. Onward to noms!
- 1 stick butter
- 1 cup sugar
- 2 eggs (or 4 egg whites)
- 3-4 bananas
- 3 tbsp water
- 1/2 cup walnuts
- 1 tsp baking soda
- 2 cups all-purpose flour
Put your butter and sugar in a bowl, and using an electric mixer, cream them until fluffy. Add your eggs/egg whites, bananas (bananas should be getting brown spots and very soft, just on the verge of being “too ripe”), water, nuts, baking soda, and flour, then beat the whole mixture with your electric mixer until well-blended.
Then you’re going to take your pan and grease it thoroughly with Crisco, and flour it lightly. If you’re doing it in a normal pan in the slow cooker, put some wax paper lightly over the top – if it’s going in a baking insert, just pour it on in there. Either way, if it’s going in the slow cooker in some manner, cook it on high for 2-3 hours.
Once it’s done, dump it out onto a cooling rack and once it’s cooled, slice it up and enjoy! This is good for breakfast, snacks, or desserts. Sweet and delicious!
